For Chicken Cutlet

  • 2 skinless, boneless chicken breasts, halved to 4 cutlets
  • 2 tablespoons of extra virgin olive oil
  • 1 teaspoon of Kosher salt
  • ½ teaspoon of freshly grounded pepper

For Topping Sauce

  • 4 cloves garlic, minced
  • ½ cup of chicken broth
  • ½ cup of dry sherry or dry white whine
  • 3 tablespoons of fresh lemon juice
  • 1 tablespoon of fresh basil leaves, chopped
  • 1 teaspoon of lemon zest
  • 1 teaspoon of cornstarch

For Sautéed Spinach

  • 4 cups of spinach, remove the stem
  • 4 oz goat cheese, sliced in 4 pieces
  • 1 clove garlic, minced
  • 1 tablespoon of olive oil

How to Cook

Cooking Chicken Cutlets

Place the chicken cutlet between 2 plastic wraps. Then, gently pound them until the thickness reaches ¼ inch. After that, season the chicken cutlets with salt and pepper.

Preheat the olive oil on a pan with medium-high heat. Then, sauté the chicken cutlets for around 3 minutes to 4 minutes until the color turns golden. Do the same to the other side and make sure the chicken cutlets are thoroughly cooked.

Remove the chicken cutlets from the pan. Then, wrap them with foil in order to keep them warm.

Cooking the Topping Sauce

In a sauté pan, put minced garlic, lemon zest, and lemon juice. Cook until they turn fragrant.

After that, pour the chicken broth and wine into the pan. Then, simmer without cover for about 10 minutes.

Whisk cornstarch in and add basil. Cook until the sauce thickens.

In a separate pan, heat the olive oil and add garlic. Cook for a minute. Then, put in spinach and cook until the spinach is shrunken.
